Predetarian ramen with Wild Boar

Who doesn't love a steaming bowl of ramen? There are many good vegan alternatives, but a real broth made from bones gives an extra umami boost. In addition, the pieces of wild boar give off a nutty flavor and provide a good filling. Again, easy to make and super tasty.

Cooking time: 70 minutes

Ingredients

  • 2 Wild boar steaks
  • 400 grams of noodles
  • 1 chili pepper,
  • 1 spring onion
  • 2 carrots
  • small mushrooms
  • coriander
  • You can use any other toppings you like

    Broth:
  • 250 ml Wildfond
  • 1 liter of water
  • 1 onion, cut into pieces
  • 1 garlic clove, cut into pieces
  • Piece of ginger cut into slices
  • 100 grams of dried shiitake
  • 1 tablespoon miso paste

Preparation method:

  1. Place the onion, garlic and ginger in a large pan and fry briefly until it browns slightly. Then add the rest of the stock ingredients and let it cook for 1 hour. Then season with salt or soy.

  2. Let the Wild Boar Steaks come out of the refrigerator at room temperature an hour in advance. Pat it dry and sprinkle generously with salt and pepper.

  3. Heat a pan over high heat and fry the steaks for 5 minutes. Remove the steaks from the pan and let them rest in aluminum foil for 10 minutes.

  4. Finely chop all toppings (julienne) and cut the steaks into thin slices.

  5. Prepare the noodles according to the packaging and place them in a bowl. Place all your toppings and the wild boar steak on top and pour the warm stock over it.

Enjoy a steaming hot bowl of delicious ramen immediately!
