Ingredients
- 1 kg minced game
- 1 large onion, finely chopped
- 4 tablespoons cornstarch
- 1 tablespoon mustard
- small bunch of parsley, finely chopped
- 1 tablespoon garlic powder
- 1 tablespoon paprika powder
- salt and pepper
- (vegan) butter
- 250 ml game stock
Preparation method:
- Combine all ingredients except the game stock and butter in a large bowl. Knead well for 5 minutes until the mixture reaches a smooth consistency. If it's still too sticky, add a little more breadcrumbs.
- Form the mixture into meatballs of equal size. For game meatballs, they should be no larger than 125 grams each. For soup or pasta, you can also make them smaller.
- Heat the butter in a skillet. Brown the meatballs until golden brown, then add the game stock. Cover the pan and simmer for 20 minutes, turning occasionally.
