Wild Meatballs

These game meatballs are the perfect base for all sorts of dishes, from a simple mashed potato to a hearty sandwich. With a blend of herbs and a rich game stock for braising, these meatballs are juicy and full of flavor. Mastered this basic recipe? Feel free to vary it with Asian, sweet-and-sour, or Italian herbs for a new twist!

Ingredients

  • 1 kg minced game
  • 1 large onion, finely chopped
  • 4 tablespoons cornstarch
  • 1 tablespoon mustard
  • small bunch of parsley, finely chopped
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika powder
  • salt and pepper
  • (vegan) butter
  • 250 ml game stock

Preparation method:

  1. Combine all ingredients except the game stock and butter in a large bowl. Knead well for 5 minutes until the mixture reaches a smooth consistency. If it's still too sticky, add a little more breadcrumbs.

  2. Form the mixture into meatballs of equal size. For game meatballs, they should be no larger than 125 grams each. For soup or pasta, you can also make them smaller.

  3. Heat the butter in a skillet. Brown the meatballs until golden brown, then add the game stock. Cover the pan and simmer for 20 minutes, turning occasionally.
