Not quite a complete dish but a basic one that I really enjoy making. From a tasty stew to a sandwich, meatballs go well with many types of dishes. Once you have mastered this ball, vary it with more other meatballs such as Asian, sweet and sour or Italian. The possibilities are endless!
Number of persons: 6
Preparation time: 15 minutes
Cooking time: 30 minutes
Ingredients
- 1 kg Minced Game
- 1 large onion, finely chopped
- 4 tablespoons cornstarch
- 1 tablespoon mustard
- small bunch of parsley, finely chopped
- 1 tablespoon garlic powder
- 1 tablespoon paprika powder
- salt and pepper
- (vegan) butter
- 250 ml Wildfond
Preparation method:
- Mix all ingredients except the game stock and butter in a large bowl. Knead it well for 5 minutes until it has a nice consistency. If it is still too sticky, add some more breadcrumbs.
- Roll the mixture into meatballs that are the same size. The best for game meatballs is if they are not much larger than 125 grams each. You can also make them smaller for a soup or pasta.
- Heat a frying pan with the butter in it. Fry your meatballs until golden brown and then add the game stock. Put a lid on the pan and stew the balls for 20 minutes, turning them occasionally.
