Wild boar is perfect for the barbecue: the rich, nutty meat develops a delicious smoky flavor that enhances the natural flavors of the boar loin. This tender piece of game is easy to prepare and ideal for a summer barbecue. Serve it with a green pepper and wild marjoram sauce for a spicy twist, or choose your own favorite sauce like chimichurri or chermoula.

  1. Remove the back from the refrigerator an hour before baking to allow it to come to room temperature

  2. Pat the back dry, rub with oil and sprinkle generously with salt and pepper

  3. Grill the back over hot coals for 3-4 minutes per side, turning regularly, or until a core temperature of 60 degrees

  4. Heat the sauce and pour over the sliced back
