The deer

The deer comes in two varieties in Europe. The Red Deer and the Fallow Deer. In the photo on the right you see a male red deer, also called red deer.

The meat of deer is tender, rich in flavor and beautifully lean. It is also a very accessible piece of meat that can be used in many different dishes.

Our deer come from areas where there are enough of them or where they need to be managed. This is often because areas, such as the Amsterdam Water Supply Dunes, are closed off with fences. They can then no longer migrate to new areas and then eat the landscape bare. This has a negative impact on birds, insects and other animal species.

It is best to remove the fences, but in the meantime management is needed. If this is done responsibly, it produces a nice piece of meat and helps the ecosystem.
