Ingredients :
- 4 pieces of wild steak ( deer , venison or wild boar )
- 500 g Brussels sprouts, cleaned and halved
- 150 g wild boar bacon cubes
- 250 ml game stock
- 2 tbsp vegetable butter
- 1 onion, finely chopped
- Salt and pepper to taste
- Olive oil for frying the steak
Instructions :

Prepare the Brussels sprouts :
Heat 1 tablespoon of butter in a large skillet over medium heat. Add the Brussels sprouts and cook for about 10-14 minutes, or until golden brown and tender. Season with salt and pepper and set aside. -
Make the sauce :
In the same pan, add the wild boar bacon cubes and cook for 3-4 minutes, or until crispy. Add the finely chopped onion and cook for another 2 minutes. Pour in the game stock and let the sauce reduce for 5-7 minutes, or until slightly thickened. Set aside. -
Prepare the wild steak :
Season the steaks with salt and pepper to taste. Heat a little olive oil in a skillet over high heat and cook the steaks for 2-3 minutes per side for medium-rare, or longer if desired. Remove the steaks from the pan and let them rest for 5 minutes. -
Serve :
Divide the roasted Brussels sprouts among plates and place the wild steak alongside. Spoon the wild stock sauce and bacon cubes over the steak. Garnish with additional herbs, such as fresh thyme, for an elegant touch.
