Preparation method

  1. Sprinkle the rolls with olive oil, salt and pepper and bake in the oven or a pan until they are nice and crispy.
  2. Finely chop the Coppa and put it together with the mayonnaise in a food processor (a hand blender will also work).
  3. Blend this into a creamy mousse
  4. Rub the rolls with a tomato and cover with the mousse
  5. Garnish with chives, tomatoes or spring onions as desired
