Preparation
Pigeon breast is best when cooked pink. Defrost the breasts and let them come to room temperature, season with salt and pepper, and cook skin-side down over medium heat for a crispy result. Flip and cook briefly on the other side, then let it rest. This will result in a tender, juicy piece of meat that is perfectly seasoned.
Serving options
Serve the pigeon breast with a classic port or red wine sauce and combine with seasonal vegetables such as pumpkin or Brussels sprouts.
