Preparation tips
Duck breast is easy to prepare and tastes fantastic when cooked pink. Start by scoring the fat and searing the breast fat-side down for a crispy coating. Then flip and sear briefly at a high temperature. Let the duck breast rest for a tender and juicy result. Delicious with a drizzle of orange sauce, balsamic vinegar, or simply a pinch of sea salt and pepper.
Serving suggestions
Dutch wild duck breast is ideal as a luxurious main course. Serve with roasted vegetables, a creamy purée, or a fresh salad with walnuts and orange segments. Fancy something special? Slice thinly and serve as venison carpaccio with a drizzle of truffle oil. A perfect seasoning.

Allow the duck breast to come to room temperature and sprinkle with salt and pepper.
Heat an ovenproof pan and add olive oil and a little margarine.
Sear the duck breast on both sides and place in a preheated oven at 180 degrees.
Bake for 2-3 minutes or until the core temperature reaches 52 degrees Celsius. Remove from the oven and let it rest.
Slice the duck breast and serve with a sweet potato puree, vegetables and a sauce of your choice.
